Delicious coffee flavored frosting that tastes like coffee ice cream! Use on mocha cupcakes or try it on brownies. Makes approximately 2.5 cups. Vegan.
In a small cup or bowl, stir the instant espresso powder into the water until dissolved.
Using a hand or stand mixer, beat the shortening on high speed until fluffy, 2-3 minutes.
Reduce speed to low and add in 1 cup of powdered sugar. Stir in the vanilla, espresso, and salt. Scrape sides of bowl and return to low speed.
Add in remaining powdered sugar and mix until smooth. Begin with 3 cups of sugar and add more if desired.
Pipe onto cupcakes or other dessert. Store unused frosting tightly covered and refrigerated.

Try this on Mocha Cupcakes!For a more firm, better crusting frosting (for prettier decorating) use the full 4 cups of powdered sugar. We prefer a thinner frosting for everyday cupcakes so we only use 3 cups total.This frosting is perfect for coffee lovers! We prefer instant espresso powder for its strength but instant coffee powder will work well, too.Approximately 170 calories for 1/12th of the batch of frosting.
